Kevin Jonas has some secrets up his sleeve about JONAS season two.

The 22-year-old actor dished to TV Guide magazine about what’s happening in season two involving Nicole Anderson, Chelsea Staub and Joe. Check it:

On filming new music sequences: “That was incredible [filming with a helicopter on the rooftop of the Renaissance Hollywood Hotel & Spa] — out of control! We never did anything like that last season. It feels like a movie! It was very cool standing there and seeing the Hollywood sign behind us—very appropriate for what this season has to hold.”

On the theme of season two: “It’s a much different show—it’s on location, it will be all over the place. The big idea is we’re spending the summer away in Los Angeles and exploring what this city has to offer. It’s going to be pretty cool—new characters, new storylines…so many different things are going to happen with it. It’s so much more fun and it’s incredible to be outside and feel the warmth of the sun all day. You have this beautiful landscape around you—it’s awesome!”

On the love connections in the series: “I’m not able to say [on Macy and Kevin], but she’s [Macy] definitely a big part of this next season and I think fans will connect with her on a further level. [With Stella and Joe] something very interesting is going to happen with that whole situation. It’s pretty cool!”

Asparagus And Potato Soup!

•No touching knives or the stove
•Do not touch any appliances without adult supervision.
•Always wash your hands before handling food.

Spring’s favorite vegetable — asparagus — stars in this hearty soup, which also includes shallots, potato, and thyme. It’s the perfect  starter or appetizer for an Earth Day feast, or for any time you want a fresh and filling soup.

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 3 medium shallots, diced small (about 1/4 cup)
  • 1 garlic clove, minced
  • 1/2 teaspoon kosher salt
  • 12 small asparagus spears, tips and bottoms removed, sliced 1/4-inch thick (about 1 cup)
  • 4 cups organic vegetable stock
  • 1 medium-size potato, diced into 1/4-inch cubes (about 3/4 cup)
  • 1 sprig fresh thyme
  • 1 teaspoon fresh-squeezed lemon juice
  • Pinch of ground white pepper
  • Pinch of sea salt
  • Garlic croutons, bagel crisps or roasted asparagus tips for garnish

Cooking Instructions

  1. In a medium saucepan, warm olive oil over medium-low heat; Add shallots, garlic and salt; sweat vegetables on low heat until shallots are soft and translucent, about 5 minutes. Add asparagus to saucepan and cook 5 minutes more.
  2. Add vegetable stock, potatoes and thyme. Cover and bring to a boil; skim foam off the top with a ladle.
  3. Lower heat and simmer about 30 minutes with lid slightly ajar. Stir occasionally.
  4. Remove from heat; discard thyme sprig. Puree soup in blender in batches, 1-2 cups at a time, until smooth. (Safety tip: Cover top of blender with a thick kitchen towel while you puree to keep hot liquid from splattering.)
    Strain pureed soup through a large fine-mesh strainer to remove any remaining lumps. Return soup to saucepan.
  5. Season soup with lemon juice, pepper and salt to taste. Garnish and serve immediately.

Tips & Tricks

To make roasted asparagus tips garnish: Preheat oven to 425 degrees Fahrenheit. Line a baking sheet with foil and add asparagus tips. Drizzle with olive oil and season with salt and pepper. Roast asparagus for about 5-8 minutes. Remove from heat, layer on top of a bagel crisp and use to garnish soup.

Preparation Time: 15 minutes

Cooking Time: 30 minutes

Ready In: 45 minutes

Servings: 4


Mango And Roasted Cashew Salad!

•Do not touch any appliances without adult supervision.
•Always wash your hands before handling food.

This rich spring recipe combines sweet, flavorful mango and its relative, the crunchy cashew. Combined with wine, ginger and maple crystals, the pair makes a light fruit salad that’s perfect for an Earth Day meal or an anytime side dish.

Ingredients

  • 1/2 cup organic sweet white wine, such as a Riesling
  • 1/4 cup maple crystals, or light brown sugar
  • 1 large mango, cut into medium-size cubes (about 1-1/2 cups)
  • 1/2 teaspoon grated ginger
  • 1 cup oven-roasted cashews (see Tip)
  • Garnish: 8 fresh mint leaves, finely chopped

Cooking Instructions

  1. Pour wine into medium bowl. Add maple crystals, and stir until completely dissolved.
    Add mango cubes and grated ginger. Cover and refrigerate for about 2 hours to let the flavors mingle.
  2. Drain off excess liquid; return to bowl. Add cashews and mix well. Garnish with fresh mint.

Substitution(s)

Other tropical fruits such as pineapples and papayas are good alternatives to the fresh mango in this recipe.

Tips & Tricks

To make the oven-roasted cashews: Preheat oven to 425 degrees F. Spread raw cashews on a baking sheet and toast in oven about 5-8 minutes, until cashews turn a light golden brown.

Ready In: 2 hours 10 minutes

Sugar Snap Pea Salad With Quinoa And Citrus Vinaigrette!

Sugar snap peas are packed with nutritious calcium, iron and vitamin C. Paired with quinoa, a whole-grain powerhouse, and fresh citrus, this salad is both healthy and delicious.

Ingredients

  • 1 cup cooked quinoa (about 1/2 cup before cooking)
  • 3 tablespoons extra-virgin olive oil
  • 3 tablespoons white wine vinegar
  • 3 tablespoons organic or raw honey
  • Juice from 1/2 medium-size lemon
  • Juice from 1/2 medium-size orange
  • 1/4 teaspoon salt
  • Pinch of fresh ground pepper
  • 1/4 teaspoon sesame seeds
  • 8 ounces sugar snap peas, rinsed and de-stringed
  • Segments from 1 medium-size orange, skin and pith removed

Cooking Instructions

  1. Prepare quinoa according to package directions. Fluff with a fork and let cool completely.
  2. While quinoa cooks, make citrus vinaigrette: Whisk together olive oil, vinegar, honey, lemon juice, orange juice, salt, pepper and sesame seeds in a small bowl; set aside.
  3. Toss snap peas with quinoa and orange segments. Drizzle citrus vinaigrette over salad and serve.

Substitution(s)

For even more of an Asian flair, use black sesame seeds instead of white, and add 1/2 teaspoon grated ginger to the vinaigrette.

To prevent botulism poisoning, never feed honey to a child under age 1.

Artichoke Risotto With Garlic And Sage!

This creamy rice dish is a spring twist on a classic Italian risotto. Artichoke hearts, sage, and wine combine with Parmesan cheese for a main dish or side dish that’s perfect for an Earth Day get-together or a family meal.

Ingredients

  • 4 cups organic vegetable stock
  • 2 tablespoons olive oil
  • 1/4 cup shallots, minced
  • 1/2 cup yellow onion, diced small
  • 2 garlic cloves, minced
  • 1 cup Arborio rice
  • 1/2 can quartered artichoke hearts (about 4 ounces), drained, rinsed and roughly chopped
  • 1 tablespoon fresh sage, finely chopped
  • 1/2 cup white wine
  • 1/2 teaspoon salt
  • Pinch of ground black pepper
  • 1/4 cup shredded parmigiano-reggiano cheese

Cooking Instructions

  1. Warm vegetable stock over low heat; set aside.
  2. In a medium saucepan, heat olive oil on medium-low; add shallots, onion and garlic. Sweat vegetables until shallots and onions are translucent, about 3 minutes. Add rice, stir and coat well; cook about 1 minute.
  3. Add artichokes, sage, white wine, salt and pepper; cook over medium-low heat until wine is absorbed, about 1 minute.
  4. Start to add stock, 1 cup at a time, stirring constantly until rice absorbs all of the liquid (about 15 minutes per cup). Rice should get creamier in texture as stock is added.
  5. When all stock has been added and absorbed, remove rice from heat and mix in cheese. Serve hot.

Make it Faster

To save time — and money — you can use canned artichoke hearts that have already been quartered instead of fresh ones.

Tips & Tricks

Because Arborio rice is so full of starch, it can easily stick to the pot if it is overcooked.  So be sure to keep an eye on it, stirring the rice constantly to keep it from sticking.

Cooking Time: 45 minutes

Ready In: 60 minutes
