You might need to use tools that require adult supervision, such as glue gun and scissors. If so, these can be replaced by textile glue and safety scissors. Make sure you ask your parents some help.

Get some joy out of that big gallon bucket of ice cream one more time by re purposing the container to fashion your very own Easter basket full of goodies!

What you’ll need:

  • Empty plastic gallon ice cream container
  • Various colors of scrap felt
  • Fabric glue
  • Scissors
  • Easter grass and plastic eggs filled with goodies

How to make it:

  1. Cut scrap felt into uniform rectangles, roughly 2″ x 4″. Use several different colors.
  2. Line the rim of the open side of the ice cream container with felt glue. Place the rectangle on top of the glue so that the long ends of the rectangles hang evenly over the outside and the inside of the rim, overlapping the rectangles as you go. Allow to dry for about 10 minutes to let the glue grab a bit. (Picture #1)
  3. Gently lay the container on its side and pipe some glue onto the outside of the container, or pipe glue directly onto the underside of the felt rectangles. Press rectangles down onto the plastic container, working your way all the way around. (Picture #2)
  4. With the container still on its side, pipe glue inside the container in the same fashion and pres felt pieces down and against the side, working your way around the bucket. (Picture #3)
  5. Pick your largest scrap piece of felt and cut it into ½” wide strips. It does not matter how long they are, though the longer the better.
  6. Pipe glue along the top of the handle. Starting at one end of the handle, wrap the thin felt strips around the handle, overlapping as you go, until the handle is covered completely. (Picture #4)
  7. Cut three egg shapes out of felt and glue them to the front of your Easter basket. Pipe lines of glue underneath and overlapping the bottoms of the eggs to create grass. Cut a piece of green felt into small strips and press into the glue to create the bed of grass. (Picture #5)

Tips:

  1. By using felt scraps you are keeping these pieces out of landfills!
  2. Fabric glue adheres better than white craft glue, though white craft glue will still work. You may need to add more glue or hold the pieces in place. Felt glue is available at all craft supply stores.
  3. For an alternative to candy, fill plastic eggs with loose change like pennies and nickels, or fold up little notes such as “good for one hug.”

Leg Of Lamb!

•Always wash your hands before handling food.

Leg of lamb is perfect for a crowd. This recipe slathers the lamb with mustard, which becomes crunchy when baked, and is studded with garlic. Makes for a wonderful Easter dinner.

Ingredients

  • 1 7-to-8 pound bone-in leg of lamb
  • 3 cloves garlic, cut into slivers
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 cup Dijon mustard

Cooking Instructions

  1. Heat oven to 350 degrees F. Sprinkle lamb with salt and pepper. Make slits in various parts of the lamb and insert the slivered garlic. Coat the leg with mustard.
  2. Roast about 1 hour 20 minutes, for medium-rare (125 degrees F. to 130 degrees F.) Let rest 20 minutes before carving.

Substitution(s)

  • A boned and rolled leg of lamb may be substituted for the bone-in leg. A 4½ pound leg will take about about 1 hour 15 minutes to 1 hour 30 minutes.
  • Any mustard can be used. A grainy country-style mustard works well.

Preparation Time: About 5 minutes


Cooking Time: About 1 hour 20 minutes

Ready In: About 1 hour 45  minutes

Poached Eggs In Spicy Tomato Sauce!

•No touching knives or the stove
•Do not touch any appliances without adult supervision.
•Always wash your hands before handling food.

This dish is pretty enough to entertain with but it’s so simple you can make it on a weekday. Prep time is practically nonexistent which makes it a perfect dish for your busiest of days.

Ingredients

  • 3 cups fire roasted chopped tomatoes (or any tomato sauce you have on hand)
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 4 large eggs
  • 1/2 cup grated Parmigiano-Reggiano cheese
  • 4 pieces of toasted country bread, buttered

Cooking Instructions

  1. Position rack in the center of the oven and preheat the oven to 350 degrees F.
  2. Pour tomato sauce into a 2 quart sized baking dish. Stir basil, red pepper flakes and salt into the sauce. Crack eggs into sauce about  1-inch apart from each other making sure not to break yolks.
  3. Bake eggs until whites are just opaque, about 22-24 minutes. Sprinkle cheese over each egg and switch oven to broiler setting. Broil for 30 seconds or until cheese is bubbly. Serve hot along side buttered toast.

Preparation Time: 5 minutes

Cooking Time: 25 minutes

Ready In: 30 minutes

Fig And Almond Crostata!

•No touching knives or the stove
•Do not touch any appliances without adult supervision.
•Always wash your hands before handling food.

Nothing fussy about this dessert yet it looks so pretty. Best thing is, the dough can be prepared a month in advance and frozen. Make some tonight and store it so you always have a treat for those unexpected guests.

Ingredients

  • 1-2/3 cups flour
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 10 tablespoons unsalted butter, at room temperature
  • 1 egg and 1 egg yolk
  • 1-1/2 cups fig jam
  • 1/4 cup sliced almonds

Cooking Instructions

  1. Preheat oven to 350 degrees F. In a food processor, combine flour sugar and salt. Run the processor for a couple of seconds, until the dry ingredients are just combined. Add butter and pulse the processor until mixture resembles a coarse meal (about 10 seconds).  Continue pulsing to add in the egg and egg yolk. Stop as soon as the egg is incorporated. Be careful not to over process.
  2. Place the dough onto a floured surface and shape into a flat disk. Wrap dough in plastic wrap and chill for about 1 hour. (Dough may be frozen up to 1 month wrapped in plastic and stored in a freezer zip lock bag.)
  3. Once the pastry has chilled, remove from refrigerator and place on a lightly floured surface. Roll the pastry into a 10-inch round (about 1/4-inch in thickness). Keep rotating the pastry to ensure that it doesn’t stick. Transfer pastry to a parchment baking sheet.
  4. Spread the fig jam over the pastry leaving a 2-inch border. Gently fold the edges of the pastry up over the jam to create a pleated look. Be sure to patch any holes or cracks before baking. Sprinkle the jam with sliced almonds.
  5. Bake tart for 25 minutes or until crust is golden brown. Allow to cool for a few minutes and serve.

Substitution(s)

Don’t like figs or almonds?  Use your favorite jam or nut.

Tips & Tricks

Want an extra brown crust? Before baking, brush dough with a mixture of 1 egg and 1 tablespoon of water.

For a nice finish, warm up 1/4 cup of Nutella spread in the microwave and drizzle over cooled tart.

Preparation Time: 10 minutes

Ready In: 1 hour 40 minutes

Chilling Time: 1 hour

Baking Time: 25 minutes
