Iced Peach Tea with Berries!

Why settle for ordinary iced tea when you can beat the summer heat with this honey sweetened peach tea.

Ingredients

  • 1-1/2 cups water
  • 3 bags peach tea
  • 2 tablespoons honey
  • 14-16 ice cubes
  • 1cup berries

Cooking Instructions

  1. Bring water to a boil. Add tea bags; brew 4-5 minutes. Mix tea and honey.
  2. Divide ice and berries between two large glasses. Divide hot tea between glasses.

Make-Ahead

Make ice cubes with blackberries, blueberries, white and red raspberries. Then you can make a big jug of the tea, without the berries, keep it in the fridge and add the ice cubes when you grab a glass of the tea.

Preparation Time: 5 minutes

Ready In: 10 minutes

Servings: 2 (3/4-cup) servings


Egg Cream!

Don’t be put off by the name. There’s no egg (nor is there cream.) This has been a favorite sweet treat enjoyed by generations of New Yorkers. Try it. You’ll love it!

Ingredients

  • 1 cup seltzer
  • 1/2 cup whole milk
  • 2 tablespoons chocolate syrup

Cooking Instructions

  1. In a tall glass pour seltzer and milk. Stir to mix, and head will form. Add syrup and mix just to combine with milk, leaving the white frothy head white. Drink at once.

Substitution(s)

Die hard fans say Fox’s U-Bet syrup is the only way to go. Others say it must be a sweet, not semi-sweet chocolate syrup such as Bosco and that Hershey’s, is not sweet enough. Use what works for you!

Traditionally whole milk has been used. Over time tastes have changed and some may prefer milk with less fat.

Tips & Tricks

The most frothy egg cream will be the one made from a newly opened bottle of seltzer.

This showstopping flag dessert combines sweet vanilla cake with colorful strawberries and blueberries for a patriotic 4th of July treat.

Ingredients

  • 1 Simple Vanilla Cake recipe, made into 20 cupcakes
  • 2 (8 ounce) packages of cream cheese
  • 1/2 stick unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups confectioners’ sugar, sifted
  • 25-30 strawberries, cut in half and thinly sliced
  • 3/4 cup blueberries

Cooking Instructions

  1. Preheat oven to 350 degrees F. Place 20 cupcake liners into 2 (12 cup) cupcake pans. Follow the directions for the Simple Vanilla Cake recipe but instead pour batter into prepared cupcake pans, filling each cupcake about one-half to three-quarters full.
  2. Bake for 18 to 21 minutes or until a toothpick inserted into the center of one of the cupcakes, comes out clean. Remove cupcakes and place on wire rack to cool before icing, about 10 minutes.

To make icing:

  1. In the bowl of an electric mixer, cream together cream cheese, vanilla extract and butter until smooth. Slowly add in confectioner’s sugar. Beat until sugar is thoroughly combined. Refrigerate until ready to use.

To assemble cake:

  1. Ice each cupcake.  Decorate 4 of the cupcakes with 4 rows of blueberries.  Decorate the remaining 16 cupcakes with strawberries. On each of the remaining cupcakes, place two strawberry slices side by side, in 4 rows.
  2. Line iced cupcakes side by side on a large serving platter, placing the four blueberry cupcakes two over two in the upper left hand corner of the flag. Cupcakes should be grouped into 4 rows of 5. Serve immediately or refrigerate for up to 2 hours.

Make It Faster

To save time, use a purchased vanilla cake mix.

Preparation Time: 25 minutes

Ready In: 45 minutes

Servings: 20 cupcakes

Baking Time: 18 minutes

Vanilla-Yogurt Fruit Dip!

You’ll be sweet on this vanilla and brown sugar-scented yogurt dip, and it’s sure to help your family get their daily servings of fresh fruit. Berries, bananas, nectarines, melon, and mixed fruit go wonderfully with this delightful dip.

Ingredients

  • 1 cup (250 mL) plain yogurt
  • 2 tablespoons (30 mL) brown sugar
  • 1 teaspoon (5 mL) vanilla extract
  • Fruit slices, sections, chunks or whole berries

Cooking Instructions

  1. Place a paper coffee filter in a small strainer or filter holder set over a cup or bowl. Spoon the yogurt into the filter and let drain, refrigerated, for one hour (or more). This will drain out some of the liquid for a richer and more creamy dip. The longer you drain, the thicker the yogurt becomes. (You can omit this step if you’re in a hurry — the dip won’t be quite so thick but will still taste delicious.)
  2. Dump drained yogurt into a small bowl. Add the brown sugar and vanilla, stirring until the sugar is dissolved.
  3. Serve with desired fruit.

Servings: Makes about 2 servings.

This tasty twist on chicken salad tosses together tender chicken, eggs and pimientos in a creamy vinaigrette sprinkled with shreds of Cheddar, slivered almonds and crushed potato chips for a unique side salad unlike any other.

Ingredients

  • 4 skinless, boneless chicken breast halves
  • 4 hard-cooked eggs, sliced
  • 2 cups chopped celery
  • 3/4 cup creamy salad dressing
  • 3/4 (10.75 ounce) can condensed cream of chicken soup
  • 1 (4 ounce) jar diced pimientos, drained
  • 2 tablespoons orange juice
  • 1 teaspoon onion salt
  • 1/2 teaspoon poultry seasoning
  • 1-1/2 cups shredded sharp Cheddar cheese
  • 1-1/2 cups crushed potato chips
  • 1/2 cup blanched slivered almonds

Cooking Instructions

  1. Boil chicken in lightly salted boiling water for 40 minutes. Drain, cool and cut into medium size pieces.
  2. In a large bowl combine chicken, eggs, celery, salad dressing, soup, pimientos, orange juice, onion salt and poultry seasoning. Mix well and spread mixture into a 9×13-inch baking dish. Sprinkle with cheese, potato chips and almonds. Refrigerate overnight.
  3. Preheat oven to 350 degrees F (175 degrees C).
  4. Bake casserole in preheated oven for 45 minutes.

Ready In: 1 hour 30 min.

  • 1 pound processed cheese
  • 2 cups mayonnaise
  • 1 (2 pound) package frozen hash brown potatoes, thawed
  • 1 white onion, chopped
  • 1 (3 ounce) jar real bacon bits

Ingredients

  • 1/2 cup cranberry juice
  • 1 cup raspberry flavored ginger ale
  • 1 strawberry, top removed, sliced in half
  • Sprig of mint

Cooking Instructions

  1. Combine juice and ginger ale in a small pitcher; pour into champagne glasses.
  2. Garnish with strawberry slice and mint sprig.

Substitution(s)

Trade the ginger ale for a raspberry-flavored sparkling water or berry-flavored sparkling lemonade.

Braised Mixed Berry Compote

This simple mix of fresh berries will sweeten your Valentine’s Day breakfast or brunch meal.  And the antioxidants in the berries have huge health benefits too.

Ingredients

  • 1/2 cup sugar
  • 1/2 cup water
  • 1 cup blackberries
  • 1 cup strawberries
  • 1 cup raspberries
  • 2 tablespoons butter
  • Sprig of fresh mint

Cooking Instructions

  1. In a large saucepan, bring sugar and water to a boil. Simmer for about 10 minutes on medium-low heat.
  2. Add the blackberries and strawberries, stir to mix thoroughly and simmer on low for 2 minutes.
  3. Add the raspberries and butter to the mixture; warm until butter just melts.
  4. Remove from heat; let cool slightly. Garnish with mint.

Tips & Tricks

Top with fresh whipped cream or crème fraîche.
