Blueberry Baked French Toast Casserole!

This blueberry filled make ahead breakfast or brunch recipe is perfect for a holiday morning or any time you want to celebrate.

Ingredients

  • 6 slices of sturdy, thick-cut white bread (about 1-inch thick)
  • 2 teaspoons butter, for pan
  • 8 large eggs
  • 3 cups milk
  • 3 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 tsp salt
  • 1 cup blueberries
  • 1/2 cup maple syrup

Cooking Instructions

  1. Butter a 9×13-inch baking dish. Arrange slices on the bottom of a 9×13-inch baking dish, overlapping the slices.
  2. In a large bowl, combine the eggs, milk, sugar, vanilla, cinnamon and salt. Whisk until blended but not too bubbly. Pour mixture over the bread slices, making sure to cover the bread evenly with the egg mixture. Gently press down bread to insure that bread is fully submerged. Sprinkle blueberries evenly over the top. Cover with foil and refrigerate for 5 hours or best overnight.
  3. Preheat oven to 350 degrees F. Bake for 40 minutes, until puffed and lightly golden. Serve with maple syrup.

Cheesy Eggs In A Nest!

It’s so simple yet it made an impact because we still have fond memories of this dish. And the title is just precious. This dish is super-fun and easy enough to make on a weekday morning.

Ingredients

  • 4 tablespoons butter
  • 4 slices of thick cut crusty bread
  • 4 large eggs
  • 1-3/4 cups shredded cheddar cheese

Cooking Instructions

  1. Using a 2-inch biscuit cutter, or an empty tomato paste can, cut a hole in each of the slices of bread to create a place for the egg to sit.
  2. Melt 2 tablespoons butter in a large skillet over medium heat. Place two of the slices of bread in the skillet. Cook until the first side is browned (about 30 seconds), then flip. Place little bits of the remaining butter into the holes of each piece of bread.
  3. Crack one egg into each of the holes in the bread and cook until the whites are halfway set. Flip each bread with a thin spatula and top each evenly with shredded cheddar.* Cover the skillet and cook for 30-60 seconds more or until cheese is melted. Placed finished “nests” on a plate. Repeat with remaining bread and eggs.
  4. To keep each batch warm, place finished nests on a cookie sheet and place in a 200 degrees F oven.

*Like your eggs runnier? Don’t flip your toast. Carefully crack your egg into the cut out hole. Cover the pan and cook for 2-3 minutes or until egg has just set and whites are opaque. Top with cheese and recover pan for 30 seconds.

Tips & Tricks

Don’t toss out the extra bread circles. Toast them up and serve them alongside this dish!

Chunky Monkey Shake!

Shakes are a great way to have a reason to drink milk. Chocolate and banana is a combo that both kids and adults can’t resist.  Serve this with a thick straw so that they can slurp up all of the chunky chocolate pieces.

Ingredients

  • 2-1/2 cups milk
  • 1/2 cup tablespoons chocolate syrup
  • 2 frozen bananas
  • 1/4 cup semi sweet chocolate chips

Cooking Instructions

  1. Place milk, chocolate syrup, bananas and semi sweet chocolate into a blender. Blend until smooth (about 2 minutes). Pour into glasses and serve with a bendy straw.

Substitution(s)

Swap out the chocolate syrup and chips for some fresh berries.

Tips & Tricks

Pour this mixture into Popsicle molds and make smoothie pops!

Surprise your loved ones this Valentine’s Day with a delicious breakfast in bed. The cardamom in this sweet sauce is a great substitute for cinnamon.

Ingredients

  • 5 large eggs
  • 1 cup whole milk
  • 2 teaspoons vanilla extract
  • 1/2 teaspoons ground cardamom
  • 6 (3/4-inch-thick) slices bread
  • 3 tablespoons butter
  • 1 cup fresh-squeezed orange juice, strained to remove as much pulp as possible
  • 3/4 cup packed brown sugar
  • 3/4 teaspoons ground cardamom

Cooking Instructions

  1. Whisk eggs, milk, vanilla and the 1/2 teaspoon of the cardamom to blend in a medium-size bowl. Add bread slices; let stand until egg mixture is absorbed, turning bread slices occasionally with spatula, about 10 minutes.
  2. Add 2 tablespoons butter to skillet; stir to melt. Add orange juice, sugar and the 3/4 teaspoon cardamom; simmer until liquid is slightly thickened and syrupy, about 5 minutes. Remove from heat.
  3. Melt remaining 1 tablespoon butter on griddle or in another nonstick skillet over medium heat. Add bread slices and cook until golden brown, about 3 minutes per side.
  4. Cut French toast slices diagonally in half, divide among plates. Top with sauce and serve.

Tips & Tricks

Keep French toast warm in a 200 degree F oven until ready to serve.

If there’s a more Valentine’s Day breakfast recipe to start the day than this delicious twist on French toast, I can’t imagine what it might be. Use an oval French or Italian loaf — day old is ideal – - so that the bread slices are substantial enough to stuff.

Ingredients

  • 4 slices French or Italian loaf (not a baguette) — 1-inch (2 cm) thick
  • 1/4 cup (50 mL) cream cheese
  • 1/4 cup (50 mL) semisweet chocolate chips
  • 1/4 cup (50 mL) strawberry jam
  • 2 eggs
  • 1/4 cup (50 mL) milk
  • 2 tbsp. (30 mL) granulated sugar
  • 1 tsp. (5 mL) vanilla extract
  • 2 tbsp. (15 mL) butter
  • powdered sugar for dusting
  • maple syrup and fresh strawberries as accompaniment

Cooking Instructions

  1. With a sharp knife, cut a pocket into the side of each slice of bread — cutting almost, but not quite all the way, to the edges. Spread the inside of each pocket with 1 tbsp. (15 mL) of the cream cheese, stuff with 1 tbsp. (15 mL) of the chocolate chips and spoon in 1 tbsp. (15 mL) of the strawberry jam. Depending on the size of the pocket and the slice of bread, you may not be able to use the full amount of stuffing ingredients — just play it by ear and use as much as will fit inside. Squash the bread closed to enclose the filling.
  2. In a bowl, beat together the eggs, milk, sugar and vanilla. Dip the stuffed bread slices into the egg mixture, turning to soak both sides evenly. Arrange on a plate.
  3. In a large skillet, melt the butter over medium heat. Add the stuffed bread to the pan and cook, turning each slice over several times to let it brown evenly and allow the heat to penetrate and melt the chocolate — about 5 or 6 minutes total. Dust lightly with icing sugar and serve with powdered sliced fresh strawberries and maple syrup.
