Chinese Stir-Fry!

http://letthemeatlentils.files.wordpress.com/2009/11/stir-fry_vegetables-ashx.jpeg

•No touching knives or the stove
•Do not touch any appliances without adult supervision.
•Always wash your hands before handling food.

It’s an excuse to use up all those leftover veggies at the end of the week. This easily adaptable Chinese stir-fry recipe takes into account all sorts of tastes and makes good use of whatever you happen to have on hand.

Ingredients

  • 2 tbsp. (30 mL) vegetable oil, divided
  • 3/4 lb. (375 g) meat or alternate (choose one or more)
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 1 tsp. (5 mL) grated fresh ginger root
  • 4 cups (1 L) vegetable possibilities (choose at least three)
  • 1/2 cup (125 mL) chicken, beef or vegetable broth
  • 2 tbsp. (30 mL) soy sauce
  • 2 tsp. (10 mL) cornstarch
  • 1/2 cup (125 mL) extra bonus ingredient (choose one), optional

Meat or alternate:

  • Boneless, skinless chicken, cut into strips
  • Boneless beef stir-fry strips (flank steak, sirloin, top round)
  • Boneless pork, cut into strips
  • Raw peeled shrimp
  • Firm tofu, cut into cubes

Vegetable possibilities:

  • Green or red peppers, cut into strips
  • Carrots, thinly sliced
  • Broccoli, broken into florets (stems sliced)
  • Zucchini, sliced
  • Mushrooms, sliced
  • Cabbage (regular or Chinese), sliced
  • Bean sprouts, rinsed
  • Celery, sliced
  • Snow peas, cut in half

Extra bonus ingredients:

  • Peanuts, coarsely chopped
  • Cashews, whole
  • Sesame seeds, toasted (don’t use more than 1 tbsp.)
  • Crispy Chinese noodles

Cooking Instructions

  1. Before you start cooking, arrange all your ingredients in bowls or on plates so that they’re ready to use. Once you begin cooking, it will all go very quickly; you won’t have time to chop or cut anything.
  2. In a very large skillet or wok, heat 1 tbsp. (15 mL) of the vegetable oil over high heat. Add your meat choice and stir-fry for 3 or 4 minutes until just cooked through. The amount of time will depend a little on what you’re cooking. Remove to a bowl (but don’t use the bowl in which you had the raw meat unless you’ve washed it first).
  3. Add remaining 1 tbsp. (15 mL) oil to the pan. Throw in onion, garlic and ginger and cook, stirring, for about 1 minute. Now begin to add the vegetable possibilities to the pan, beginning with the ones that take the longest to cook (carrots, broccoli stems, etc.) and ending with the ones that cook most quickly (bean sprouts, snow peas). Cook, stirring and tossing for about 2 minutes, then pour in the broth, cover the pan with a lid and let everything steam for 2 or 3 minutes.
  4. In a small bowl, stir together soy sauce and cornstarch.
  5. When the vegetables are tender but still quite crisp, return the meat (or whatever) to the pan, stir and add the soy sauce mixture. Continue to stir-fry for 1 or 2 minutes or until the sauce is thickened and glossy. Transfer to a serving bowl and sprinkle the top with the extra bonus ingredient, if you’re using one.
  6. Serve immediately with hot cooked rice or noodles.

Ready In: 30 min.
Servings:
4

Old-Fashioned Strawberry Cobbler!

•No touching knives or the stove
•Do not touch any appliances without adult supervision.
•Always wash your hands before handling food.

Old-fashioned but still a favorite, this fruit filled cobbler recipe features spring strawberries sweetened just right and tucked into a crisp crust. It’s the perfect finish for an Earth Day celebration — or any other occasion.

Ingredients

For fruit filling:

  • 1 cup water
  • 1/2 cup organic cane sugar
  • 1 tablespoon arrowroot
  • 16 ounces fresh strawberries, rinsed, tops removed and sliced in half

For cobbler topping:

  • 1 cup flour
  • 2 teaspoons baking powder
  • 1/3 cup oats
  • 3 tablespoons brown sugar
  • 1/2 teaspoon kosher salt
  • 4 tablepoons (1/2 stick) organic butter

Cooking Instructions

  1. Preheat oven to 400 degrees F; butter a medium-size baking dish and set aside.
  2. In small saucepan, whisk together water, sugar and arrowroot over medium heat until sugar dissolves and sauce thickens.
  3. Add strawberries and coat well. Simmer on low heat until berries soften slightly, about 3 minutes. Pour berry mixture into baking dish.
  4. To make cobbler topping: Sift flour, baking powder, oats, brown sugar and salt together in a medium bowl.
  5. Spoon cobbler mixture over strawberries. Bake in oven for 40-45 minutes, until topping crusts over and gets firm.

Substitution(s)

If you don’t have arrowroot on hand, substitute 2-1/4 teaspoons of corn starch.

Tips & Tricks

Don’t worry if the strawberry mixture starts to bubble over and coat the cobbler while it’s in the oven; the syrup will give the topping added flavor.

Rapunzel Gets Tangled

Rapunzel, Rapunzel, Let Down Your Hair…

Disney is taking a new twist on the classic story of Rapunzel. So much that they’ve renamed the movie to Tangled.

Producer Roy Conli posted on Facebook about the upcoming flick, “I have some exciting news to share, and it was important to me that YOU guys – the Disney fans – hear it first. I want to tell you about Walt Disney Animation Studio’s 2010 release, Tangled. It’s a really fresh, smart take on the Rapunzel story. In our film, the infamous bandit Flynn Rider meets his match in the girl with the 70 feet of magical golden hair. We’re having a lot of fun pairing Flynn, who’s seen it all, with Rapunzel, who’s been locked away in a tower for 18 years.”

He continued, “I’m so proud of the crew working on this film – they’re doing a fantastic job creating an awesome story with great characters and a stunning world – and it’s all going to look amazing in 3D. All of us here at the studio are incredibly excited for you to see Tangled when it comes out in theaters this November.”

Your hairstyle can accentuate your natural beauty, or not. It is important to pick a hairstyle that brings out the best of your face.

Square face: If your face has a lot of hard angles, then you want a haircut that softens these lines. The best is a shoulder-length cut that is wavy, not straight. Hayden Panettiere has this sort of face and cut. She looks good with bangs, but doesn’t usually have them.

If you have a triangular face then you may have a prominent of pointy chin, like Kristen Stewart. The best look for you then is long hair cut into layers that will give it volume.

Long face: If your face is long then you will want to wear your hair curly or wavy with bangs. Taylor Swift is a good example of this look. Check her out with straight hair!

Round face: If you have a round face then you can wear your hair in just about any style. Just look at Selena and Miley! But the best cut is a long straight style that balances the roundness of their faces.
