Cocoa Granola!

I always have a batch of granola in my pantry. It makes for a great quick breakfast or snack. Cocoa powder makes this granola special but it’s not too sweet which makes it a perfect recipe for the whole family to enjoy.
Ingredients
- 3 cups old fashioned rolled oats
- 3/4 cup walnuts, chopped
- 1/2 cup sweetened coconut
- 2 tablespoons cocoa powder
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup pure maple syrup
- 1/4 cup canola oil
Cooking Instructions
- Preheat oven to 325 degrees F. Line a large baking sheet with parchment paper.
- In a large bowl, combine the rolled oats, walnuts, coconut, cocoa powder, cinnamon and salt. Stir until combined.
- In another, smaller bowl; stir together the oil and the maple syrup. Pour mixture over the oats and stir until well coated. Spread oat mixture onto prepared baking sheet and bake for 40-45 minutes, making sure to stir the granola every 15 minutes to insure even browning.
Storage Tips
Allow granola to cool completely, store in an airtight container in the refrigerator for up to 4 weeks.
Tips & Tricks
This granola makes a perfect hostess gift. Pour some in an old jelly or Mason jar or wrap up a batch in a cellophane bag tied with a pretty ribbon.

Oven Puffed Pancake!

This dish has a big wow factor. It’s easier to make for a crowd than regular pancakes and much more fun! Everyone will ooh and ahh when you bring this baby to the table.
Ingredients
- 2 tablespoons butter
- 6 large eggs
- 1 cup flour
- 1/2 teaspoon salt
- 2 tablespoons sugar
- 1 cup milk
- 1/2 cup confectioner’s sugar
- Juice of half of a lemon (optional)
Cooking Instructions
- Preheat oven to 400 degrees F. Place the eggs, flour, salt, sugar and milk into a blender and blend until smooth, about 1 minute.
- Place butter in a 10- or 12-inch cast iron skillet and heat in the oven until butter melts and pan is hot. Using an oven mitt, remove pan from the oven and place on a heat resistant surface. Swirl the pan to ensure that melted butter is evenly distributed. Carefully pour the pancake mixture into the pan.
- Bake at 400 degrees F for 15 minutes. Reduce temperature to 325 degrees F. Bake 40-45 minutes or until it reaches a deep golden brown. Remove from oven and immediately slide pancake onto a serving plate.
- Top with powdered sugar and a sprinkle of lemon juice. Cut into wedges and serve warm.
Tips & Tricks
Fill the center of the pancake with the fresh fruit of your choice. Berries, peaches, and plums are a fave!
Scoop some vanilla ice cream into the center and serve as dessert.

Easy Easter Rustica Pie!

This traditional Easter main dish pie combines a three cheese filling with savory salami, ham, and herbs. All you need is a green salad and some crusty Italian bread to made a wonderful meal.
Ingredients
- 1 (9-inch) deep dish frozen pie shell
- 1-1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup freshly grated Parmesan cheese
- 2 tablespoons chopped flat leaf parsley
- 1/4 pound sliced deli Genoa salami, cut into small squares
- 1/4 pound sliced boiled deli ham, cut into small squares
- 1/2 teaspoon freshly grated nutmeg
- Salt and pepper to taste
Cooking Instructions
- Preheat oven to 375 degrees F. In a large bowl combine, eggs, ricotta, mozzarella, Parmesan cheese, parsley, nutmeg and salt and pepper. Stir until well combined. Gently stir in the salami and ham.
- Bake for 35-40 minutes or until top is slight golden and filling is set. Allow pie to cool for 5 minutes. Serve warm.
