LEMON PIE. EASY AND DELISH!

This is a yummy and easy recipe. Perfect for a summer treat!

Here is what you are going to need to make the pie:

  • 1 small package of lemon Jello
  • 1 tall can of evaporated milk
  • 2 eggs
  • 1 cup of sugar
  • 1 1/2 cup of pineapple juice

First, beat eggs in a large pot add then add sugar and pineapple juice.

Then ask an adult for help. Mixing, bring sauce to a boil. Remove from heat and add lemon Jello.

Then, cool in a pan of water or ice (about 1 hour).

Put evaporated milk in the largest mixer bowl and set into freezer until ice forms around edges. Then whip in mixer until stiff peaks form.

Now you are half way there.

Next add the first mixture that has been cooling, in a slow stream and continue to beat until all is mixed together.

Pour into 2 (9″) pie crust (or use vanilla crust).

Ready to eat? Not yet! Refrigerate at least 2 hours before serving.

When you don’t have a lot of time to create a snack, look to this twist on an American classic. Sweet, tender apple slices nestled into two slices of bread create a handheld version of apple pie that’s quick and easy to make.

Ingredients

  • 1/2 stick unsalted butter, plus 1/4 cup melted butter for brushing tops of pies
  • 2 large apples, peeled, cored and diced small
  • 1 tablespoon brown sugar
  • 1/2 tablespoon cinnamon
  • 3/4 tablespoon flour
  • 1 loaf white bread (about 17 slices), crusts removed

Cooking Instructions

  1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
  2. In a large skillet over medium heat cook butter, apples, brown sugar and cinnamon for about 4 minutes. Sprinkle in flour, stir and cook for about 2 minutes more or until apples are tender. Place mixture into a bowl and set aside to cool.
  3. Using a rolling pin, roll each slice of bread until it is thin and flat (this ensures that the bread is pliable). Place about 1 teaspoon of apple mixture into the center of each slice of bread. Wet two of the edges of each slice of bread with a little bit of water. Fold the slice of bread diagonally to that it forms a triangle. Firmly press the edges of the bread together creating a tight seal. Place hand-pies onto prepared baking sheet. Brush each of the hand-pies with the remaining melted butter.
  4. Bake until golden brown, about 15 minutes.

Tips & Tricks

These pies are delicious served cold or at room temp, making them perfect lunchtime fare.

Add raisins or chopped nuts into the mixture to change it up.

Cocoa Granola!

I always have a batch of granola in my pantry. It makes for a great quick breakfast or snack. Cocoa powder makes this granola special but it’s not too sweet which makes it a perfect recipe for the whole family to enjoy.

Ingredients

  • 3 cups old fashioned rolled oats
  • 3/4 cup walnuts, chopped
  • 1/2 cup sweetened coconut
  • 2 tablespoons cocoa powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup pure maple syrup
  • 1/4 cup canola oil

Cooking Instructions

  1. Preheat oven to 325 degrees F. Line a large baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, walnuts, coconut, cocoa powder, cinnamon and salt. Stir until combined.
  3. In another, smaller bowl; stir together the oil and the maple syrup. Pour mixture over the oats and stir until well coated. Spread oat mixture onto prepared baking sheet and bake for 40-45 minutes, making sure to stir the granola every 15 minutes to insure even browning.

Storage Tips

Allow granola to cool completely, store in an airtight container in the refrigerator for up to 4 weeks.

This granola makes a perfect hostess gift. Pour some in an old jelly or Mason jar or wrap up a batch in a cellophane bag tied with a pretty ribbon.

Oven Puffed Pancake!

This dish has a big wow factor. It’s easier to make for a crowd than regular pancakes and much more fun! Everyone will ooh and ahh when you bring this baby to the table.

Ingredients

  • 2 tablespoons butter
  • 6 large eggs
  • 1 cup flour
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 1 cup milk
  • 1/2 cup confectioner’s sugar
  • Juice of half of a lemon (optional)

Cooking Instructions

  1. Preheat oven to 400 degrees F. Place the eggs, flour, salt, sugar and milk into a blender and blend until smooth, about 1 minute.
  2. Place butter in a 10- or 12-inch cast iron skillet and heat in the oven until butter melts and pan is hot. Using an oven mitt, remove pan from the oven and place on a heat resistant surface. Swirl the pan to ensure that melted butter is evenly distributed. Carefully pour the pancake mixture into the pan.
  3. Bake at 400 degrees F for 15 minutes. Reduce temperature to 325 degrees F. Bake 40-45 minutes or until it reaches a deep golden brown. Remove from oven and immediately slide pancake onto a serving plate.
  4. Top with powdered sugar and a sprinkle of lemon juice. Cut into wedges and serve warm.

Tips & Tricks

Fill the center of the pancake with the fresh fruit of your choice. Berries, peaches, and plums are a fave!

Scoop some vanilla ice cream into the center and serve as dessert.

Easy Easter Rustica Pie!

This traditional Easter main dish pie combines a three cheese filling with savory salami, ham, and herbs. All you need is a green salad and some crusty Italian bread to made a wonderful meal.

Ingredients

  • 1 (9-inch) deep dish frozen pie shell
  • 1-1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tablespoons chopped flat leaf parsley
  • 1/4 pound sliced deli Genoa salami, cut into small squares
  • 1/4 pound sliced boiled deli ham, cut into small squares
  • 1/2 teaspoon freshly grated nutmeg
  • Salt and pepper to taste

Cooking Instructions

  1. Preheat oven to 375 degrees F. In a large bowl combine, eggs, ricotta, mozzarella, Parmesan cheese, parsley, nutmeg and salt and pepper. Stir until well combined. Gently stir in the salami and ham.
  2. Bake for 35-40 minutes or until top is slight golden and filling is set. Allow pie to cool for 5 minutes. Serve warm.

Ready In: 45 minutes

This creamy, light pie is a delicious finale to a St. Patrick’s Day feast. A citrusy custard is sandwiched between a graham cracker crust and whipped cream, and green sprinkles lend holiday sparkle.

Ingredients

  • 5 egg yolks
  • 1 (14-ounce) can sweetened condensed milk
  • 6 tablespoons freshly squeezed lime juice
  • 1 prepared graham cracker pie crust
  • Whipped cream (purchased or fresh) or non-dairy whipped topping
  • Green sprinkles for decoration

Cooking Instructions

  1. Preheat the oven to 350 degrees F. In a mixing bowl, beat the egg yolks with the sweetened condensed milk and the lime juice until it is smooth.
  2. Pour it into the pie crust. Bake for about 15 minutes, or until set. Remove the pie from the oven and allow to cool to room temperature, then refrigerate.
  3. Pipe whipped cream on top of the pie or spread it with non-dairy whipped topping. Sprinkle the top of the pie with green sprinkles.

Substitution(s)

  • Use bottled lime juice in place of freshly squeezed lime juice if you like.
  • This pie is also delicious when made with either a prepared cookie crust or a storebought frozen pie crust. If you use a frozen pie crust, bake it at 400 degrees F for 10 to 15 minutes. Cool completely before filling with custard. Reduce the oven heat to 350 degrees F and bake for 15 minutes or until set.

Make-Ahead

This pie can be made the morning that you want to serve it. It’s best eaten within two  days.

Attract all the leprechauns in your neighborhood with this heavenly green pie filled with white chocolate mousse. Flavored with mint or vanilla, it’s absolutely delicious for St. Patrick’s day, or for dessert any day.

Ingredients

  • 5 squares (1-oz./28 g each) white chocolate
  • 1/4 cup (50 mL) whipping cream
  • 4 oz. (125 g) cream cheese, softened
  • 1/2 tsp. (2 mL) liquid green food coloring
  • 1/2 tsp. (2 mL) vanilla or peppermint extract
  • 1/2 cup (125 mL) powdered sugar
  • 1 cup (250 mL) whipping cream, whipped until stiff
  • 1 9-inch (23 cm) graham cracker or chocolate crumb crust
  • 1/2 cup (125 mL) mint chocolate chips or green melting wafers (the kind for candy-making)
  • additional candies or sprinkles, if desired

Cooking Instructions

  1. In a large, microwave-safe bowl, combine the white chocolate and 1/4 cup (50 mL) of the whipping cream. Microwave on high power, 30 seconds at a time, stirring after each time, until the chocolate is completely melted and the mixture is smooth.
  2. With an electric mixer, beat the softened cream cheese, the green food coloring, the vanilla or peppermint extract and the powdered sugar into the chocolate mixture until everything is evenly blended.
  3. Gently fold in the whipped cream, taking care not to deflate the cream, until no white streaks remain.
  4. Spoon into the prepared crumb crust, cover with plastic wrap and chill for at least 4 hours or overnight.
  5. Melt the chocolate chips or green melting wafers in a double boiler over hot water, stirring until smooth. Drizzle over top of the chilled pie, then return to the refrigerator until set. If you wish, you can decorate the top of the pie with additional green candies or sprinkles before serving.

Servings: 6 to 8

Spoon the filling into the pie shell.
Decorate the pie with drizzled chocolate and other decorations.
