•No touching knives or the stove
•Do not touch any appliances without adult supervision.
•Always wash your hands before handling food.

This recipe for a delicious Apple Puff Pancake is good all by itself, but even better when served with a drizzle of maple syrup.

Ingredients

  • 2 tbsp (30 mL) butter
  • 4 eggs
  • 1 cup (250 mL) milk
  • 1 tsp (5 mL) vanilla
  • 2/3 cup (175 mL) all purpose flour
  • 2 tbsp (30 mL) granulated sugar
  • 1/4 tsp (1 mL) cinnamon
  • 2 medium apples, peeled, cored and thinly sliced
  • icing sugar for dusting
  • maple syrup, as an accompaniment, if desired

Cooking Instructions

  1. Preheat the oven to 425 degrees F (220 degrees C).
  2. Place the butter in a 10-inch (25 cm) deep dish pie plate or a 9-inch (23 cm) square baking dish.
  3. In a medium sized mixing bowl, beat together the eggs, milk and vanilla with an electric mixer until well mixed and foamy. In a small bowl, stir together the flour, sugar and cinnamon. Add to the egg mixture and beat just until smooth. Set aside for a moment.
  4. Place the pie plate or baking dish into the oven and let heat until the butter is melted and hot. Remove from the oven and holding the dish carefully with oven mitts, swirl gently to coat the entire surface with butter. Quickly arrange the apple slices evenly on the bottom of the dish and pour in the batter.
  5. Place in the oven and bake 30 to 35 minutes or until puffed and lightly browned. Dust with icing sugar before cutting into wedges or squares. Serve with a drizzle of maple syrup if you like.

Servings: 6 to 8

Pizza Frittata!

http://hostedmedia.reimanpub.com/TOH/Images/Photos/37/PIZZAFRITTATA(1).jpg

•No touching knives or the stove
•Do not touch any appliances without adult supervision.
•Always wash your hands before handling food.

A cross between an omelette and a pizza, this frittata combines the best of both dishes. This delicious egg dish blends everyone’s favorite ingredients for a saucy scrambled supper your family will love.

Ingredients

  • 1 tbsp. (15 mL) olive oil
  • 1 cup (250 mL) chopped onion
  • 1 cup (250 mL) sliced mushrooms
  • 1 cup (250 mL) chopped green pepper
  • 1 cup (250 mL) diced pepperoni
  • 6 eggs, beaten
  • 2 tbsp. (30 mL) grated Parmesan cheese
  • 1/2 tsp. (12 mL) salt
  • dash black pepper
  • 3/4 cup (175 mL) spaghetti sauce (any kind)
  • 1 cup (250 mL) shredded mozzarella cheese

Cooking Instructions

  1. Preheat the broiler element of the oven. Arrange the top rack of the oven so that it is about 6-inches (15 cm) from the broiler element.
  2. In a 10-inch (25 cm) non-stick skillet, heat the oil over medium heat. Add the onion, mushrooms and green pepper and cook, stirring, until the onion is tender — about 6 to 8 minutes. Stir in the pepperoni and continue to cook for another 3 or 4 minutes, until the onion and mushrooms are lightly browned.
  3. In a bowl, beat together the eggs, Parmesan cheese, salt and pepper. Pour this mixture over the sautéed vegetables in the skillet — but don’t stir. Turn the heat down to low and let the frittata cook until very nearly completely set — 12 to 15 minutes. The bottom will be browned (but not burned), the edges firmly set, and the middle will still be a bit soft. Remove from heat.
  4. Dollop the spaghetti sauce over the top of the frittata as evenly as possible and sprinkle with the mozzarella cheese. Place the skillet onto the upper rack of the oven and let broil until the cheese is melted, bubbly and beginning to brown — 2 or 3 minutes. Remove from oven and let cool for a minute or two before removing from the pan and cutting into wedges to serve.

Servings: 4

If you don’t feel like celebrating St. Patrick’s Day with a traditional corned beef and cabbage dinner, make this easy pizza instead. It’s got the traditional holiday ingredients (corned beef and cabbage) on a crisp crust, all topped with melting mozzarella cheese for a dinner the whole family will love. Thanks to a prepared pizza crust, like a Boboli, this is a super-quick meal to make.

Ingredients

  • 2 cups of shredded green cabbage, shredded (about 1/4 head)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • Pinch of freshly ground black pepper
  • 1 purchased pizza crust (such as Boboli)
  • 1/4 pound thinly sliced corned beef
  • 2 cups grated mozzarella cheese

Cooking Instructions

  1. Preheat the oven to 400 degrees F. Spray a large baking sheet with cooking spray.
  2. In a large skillet, saute the cabbage in the olive oil over medium heat for about 5 minutes or until it is soft. Sprinkle with the salt and pepper, and remove from the heat.
  3. Place the pizza crust on the baking sheet. Spoon the sauteed cabbage onto the crust and spread it out evenly to within half an inch of the edge. Arrange the corned beef slices over the cabbage. Sprinkle the cheese on top of the corned beef.
  4. Bake the pizza for 10 to 15 minutes, until the cheese is thoroughly melted and the pizza is nice and hot. Cut into wedges and serve immediately.

Substitution(s)

  • You can vary the flavor of this pizza by adding some shredded carrots to the cabbage when you sauté it. You could also add a little finely minced garlic to the vegetable mixture. Substitute one half cup of Parmesan for one half cup of the mozzarella cheese, if you like this flavor.
  • In place of a Boboli, you can buy a bag of prepared pizza dough at the supermarket and press it out into a 10-inch round. Bake it for about 10 minutes in a 400 degree F oven before adding the toppings, then bake for another 10 to 15 minutes.
  • For picky eaters, omit the corned beef and cabbage, and sprinkle with some mozzarella cheese. Serve with carrot sticks or applesauce so your younger siblings will get some vegetables.

Make-Ahead

You can prepare the toppings for this pizza early in the day and then assemble the pizza shortly before you plan to bake it.

What could possibly be better than pizza? Well, a chocolate chip pizza pie, of course. With toppings that’ll please even the fussiest of people, this decadent dessert pizza is easy and fun for the small fry to make and enjoy.

Ingredients

Cookie base:

  • 1/2 cup (125 mL) sugar
  • 1/4 cup (50 mL) light brown sugar
  • 6 tbsp. (90 mL) butter, softened
  • 1 tsp. (5 mL) vanilla extract
  • 1 egg
  • 1 cup (250 mL) all purpose flour
  • 1/2 tsp. (2 mL) baking soda
  • 1-1/2 cups (375 mL) semisweet chocolate chips

Cream cheese icing:

  • 2 cups (500 mL) powdered sugar
  • 1/2 cup (125 mL) cream cheese
  • 1/4 cup (50 mL) butter
  • 1/2 tsp. (2 mL) vanilla extract

Toppings:

  • Chocolate, butterscotch or peanut butter chips
  • Chopped nuts
  • Miniature marshmallows
  • Mini M&Ms
  • Shredded coconut
  • Gummy candies
  • Fresh fruit (berries, chopped bananas, apples, pears, peaches)
  • Melted chocolate for drizzling

Cooking Instructions

  1. Preheat oven to 350 degrees F (180 degrees C). Line a 12-inch (30-cm) pizza pan with parchment paper cut exactly to fit the pan. Do not grease.
  2. In a medium bowl, combine sugar, brown sugar, butter and vanilla. Beat with an electric mixer until fluffy, then add the egg and continue beating until very creamy. Measure in the flour and baking soda and beat the mixture until all the flour has been incorporated and the dough is smooth. Add the chocolate chips and mix, using a wooden spoon, just until combined.
  3. Dump the dough into the prepared pan and spread it, using a fork, to within 1 inch (2 cm) of the edges of the pan. (The dough will expand as it bakes, so you have to leave a bit of room for that.) Place in the oven and bake for 20 to 22 minutes or until lightly browned on top and set in the middle. Remove from oven, slide the cookie off the pan onto a cooling rack and let cool completely.
  4. Meanwhile, make the icing. Combine powdered sugar, cream cheese, butter and vanilla in a medium bowl. Beat with an electric mixer until very smooth and creamy. Refrigerate, covered with plastic wrap, until you’re ready to use.
  5. When the base is completely cool, spread with the icing, leaving a border around the edge for maximum pizza realism. Sprinkle with your choice of toppings, using 1 to 2 cups (250 to 500 mL) of assorted toppings per pizza. More is not necessarily better.
  6. Cut into wedges with a pizza cutter and serve to your adoring fans.

Servings: 12
