Strawberry Spritzers!

This refreshing drink is a hit with people of all ages. The combo of strawberries and sparkling apple cider is a real winner and the pink color makes this beverage extra special.
Ingredients
- 4 cups strawberries, chilled
- Juice of 1/2 lemon
- 2 cups sparkling apple cider, chilled
Cooking Instructions
- Place strawberries, and lemon juice into a blender; puree until smooth.
- Divide strawberry puree between 8 medium sized glasses. Top with Sparkling apple cider. Serve immediately.
Substitution(s)
Not a berry fan? Puree up some juicy peaches for a Bellini-style beverage.
Tips & Tricks
Add a few mint leaves to the blender before pureeing for a minty touch.
For a special presentation, garnish glasses with fresh berries.

Honey Almond Breakfast Polenta!

Sick and tired of your usual oatmeal? We got ya’ covered! Try a creamy, steaming bowl of this breakfast polenta. It’s warm and creamy-delicious. It’s the perfect way to warm up your morning.
Ingredients
- 4 cups milk
- 3/4 teaspoon salt
- 1 cup quick cooking polenta
- 1/4 cups unsalted butter
- 1 teaspoon vanilla extract
- 1/4 cup honey
- 1/2 cup sliced almonds
Cooking Instructions
- In a medium saucepan over medium heat, bring milk to a low boil.
- Reduce heat to low. Add salt and slowly whisk in the polenta, making sure to whisk rapidly to avoid lumps. Continue whisking and add in the butter. Turn heat off and whisk in the vanilla.
- Place polenta in bowls. Top with honey, a sprinkle of almonds and an extra pat of butter if desired.
Substitution(s)
Prefer something savory? Skip the honey and almonds and whisk in some parmesan cheese with the butter instead.

Caprese-Style Herbed Strata!

Feed a large group on Easter morning with this delicious casserole of eggs, bread, mozzarella cheese, and tomatoes.
Ingredients
- 2 tablespoons unsalted butter melted plus more for greasing pan
- 6 large slices of sturdy bread (about 1/2-inch thick)
- 2 cups shredded mozzarella cheese
- 1 cup sun dried tomatoes, finely chopped
- 1/2 cup basil, finely chopped
- 4 large eggs
- 2 cups milk
- 1 teaspoon salt
- 1/2 teaspoon pepper
Cooking Instructions
- Butter a 9×13-inch baking dish. Line the bottom of the dish with about 3 slices of bread. You will need to cut some slices to make sure the bottom is entirely covered. Spread half of the sun dried tomatoes and all of the basil on top of the bread. Sprinkle half of the cheese. Repeat with the remaining pieces of bread, sun dried tomatoes and cheese.
- In a medium bowl whisk together eggs, milk, melted butter, salt and pepper. Pour egg mixture over the bread layers. Gently press down bread to insure that bread is fully submerged. Cover with foil and refrigerate for at least 5 hours or even better overnight.
- Preheat oven to 350 degrees F. Bake strata until golden and bubbly, about an hour. Allow dish sit for 5 minutes before serving.
Substitution(s)
For a Provencal twist, use olive tapenade instead of the sun dried tomatoes.
